Gatas is a Brooklyn-based dessert project serving unapologetically dense, caramel-covered flans that may or may not ruin your day (in a good way).
We make small-batch, spoon-forward delights using time-honored recipes, questionable boundaries, and a suspicious amount of condensed milk. Inspired by family kitchens, existential spirals, and the emotional weight of dessert, Gatas is not here to be light. It’s here to be felt.
Every flan is a soft protest against its minimalist façade—glossy, maximal in flavor, and deeply committed to collapsing gently under the weight of your spoon (and possibly your feelings).
Founded by two people who needed an outlet and chose custard, Gatas lives somewhere between pop-up, performance, and personality crisis.
Each flan is a glossy love letter to tradition, texture, and tasteful emotional damage.
Delicate and dreamy, this flan is made with butterfly pea flower and chamomile, blending soft floral notes with a gentle earthiness. The custard is light and silky, topped with a scatter of dried blossoms for a little drama. Sweet, herbal, and just the right amount of whimsical—it tastes like a slow afternoon in bloom.

Lovingly named after its patron, The Laura is our house Black Sesame Flan. This unique infusion combines the nutty, roasted flavor of sesame seeds with the creamy texture of traditional flan.
